If you’re looking to cut down on carbs or just to add some more veggies into your diet you have to try this easy spaghetti squash recipe  in place of pasta.

Let’s first compare 1 cup of spaghetti squash with 1 cup of traditional spaghetti noodles. There’s really no explanation needed 42 cals v. 221 cals and 10g of carbs v. 43.2g of carbs? So seriously, try spaghetti squash in place of spaghetti and enjoy your favorite “pasta” dishes guilt free.




Serves: 4-6


  • 1 large spaghetti squash (about 2lbs)
  • Spray olive oil (I use Trader Joe’s)
  • Salt
  • Pepper

…yes THAT easy!


Step 1: Preheat oven to 400

Step 2: cut the squash in half (this is the hardest part). If you have trouble cutting it in half poke about 10 small holes in the squash and place it in the microwave for 3 minutes to soften it up.

Step 3: scrape out the seeds (discard).

Step 4: Spray with olive oil and season with salt and pepper.

Step 5: Place squash seasoned side down onto a baking sheet and bake for 30-35 minutes.

**The squash should be somewhat caramelized and will be soft in the center when it is done. Look at this beautiful squash yummmmmmmm.

Step 6: Scrape the squash into spaghetti like strands and enjoy!

You can top spaghetti squash with marinara sauce, pesto, alfredo, leave it plain, use it for pad thai or stir fry- the possibilities are endless. What’s your favorite way to enjoy spaghetti squash?

    I just made spaghetti squash this week too! I mixed it with some shredded brussel sprouts, sautéed onions and bell pepper, chicken sausage and Parmesan. It’s on of my favorite fall recipes and perfect for meal prep!

    I love spaghetti squash. I used to have such trouble cutting thru it before it was cooked. Now I put the whole thing in the oven until it softens then let it cool a bit then cut it and scoop seeds out then put it back in. so much easier. This recipe sounds very tasty and healthy. I do not like regular spaghetti.
