Dinner, Food


This last week I only exercised a couple times and ate terribly…I earned it right after running a half marathon? I went to pho Monday, sushi Tuesday, Chipotle Wednesday…we won’t even continue.

But, it’s time to take control of my eating again and start this week out right!

On Sundays I typically sit and plan my dinners for the whole week (last week was an exception), write down exactly what I need to buy for ingredients then go to the store and ONLY buy what I need for the week. Doing this has seriously saved me SO MUCH money. I can usually do a full week of meals for about $60 and that includes breakfast, snack, lunch, snack and dinner. STICK TO A LIST AND HAVE A PLAN!

There’s a saying “If you fail to plan, you plan to fail” which is so true with eating healthy and on a budget through a busy work week.


I’m going to start sharing my weekly dinner plan with you all every Sunday and highly encourage you to plan your meals as well. I write my meal plan on a magnetic white board that I stick on my refrigerator, mostly so if Bryce wants to know what’s for dinner he can just look HA! Weekly Meals:

Sunday: Crockpot Salsa Chicken Thighs on a taco salad (lettuce, tomato, olives, corn, black beans and avocado) http://liveleaneatgreen.com/recipe/crockpot-salsa-chicken-thighs/

Monday: Street Fish Tacos from Juli Bauer’s Paleo Cookbook. You have to buy her book for this recipe but Juli is one of my favorite bloggers and every single one of her recipes are delcicious. Check her out: http://paleomg.com/

Tuesday: Turkey taco salad (recipe coming soon) but you basically just season ground turkey with taco seasoning and place on top of a taco salad (lettuce, tomato, olives, corn, black beans and avocado)

Wednesday: Taylor Farms Asian chopped bagged salad with rotisserie chicken. **SO EASY!

    Love this soup. I actually will add carrots and celery. I also will top it with a little bit of avocado.
