Last week I discovered my new favorite easy weeknight dinner- Greek Polenta!

Kellen at A Cup of Kellen posted this Greek Polenta recipe (pictured) and you guys…IT’S AMAZING!!! There are so many bold, delicious flavors in this meal your taste buds will be excited by every single bite.

I was really intimidated to try cooking polenta but good old Trader Joe’s makes it so easy with their Organic Polenta. It’s already cooked so all you have to do it heat it in a skillet for a few minutes on each side.

This meal took maybe 10 minutes to throw together and tastes like you were slaving in the kitchen for hours. I served my Greek Polenta over a big plate of baby kale and to help fill Bryce up heated up some sun-dried tomato sausages…YUM!

This is Bryce’s plate and let’s just say he was licking the plate clean he loved this meal so much.

    I’ve tried polenta but I honestly can’t remember the recipe it was in. It was good though but I very rarely use it. I will have to try this sometime.

      I’ve made it before with just corn meal and chicken broth then add cream cheese (on a splurge day of course HA). The pre made polenta like this is so easy to use and you can really use it in any recipe since it has such a mild flavor. Enjoy 🙂

    Okay this looks absolutely incredible!! Isn’t it funny how intimidating an ingredient can look, but then when you finally get the courage to do it, it ends up being silly how easy it is?! I have used polenta as a breading (so good on chicken!) but I haven’t made it as cakes/discs but this was the inspiration I needed. I love the Greek flavours you added to this. I cannot wait to make this! Thanks for sharing, Diana! xx

      Haha YES it’s crazy how sometimes I won’t even attempt a recipe because I’m too intimidated…but really whats the worst that can happen it’s awful and you end up with take out and a hilarious story?

      I bet polenta is so good as breading I need to try that. This recipe is seriously so delicious- let me know how you like it.
