Time is just FLYING! I can’t believe that next week is St. Patrick’s Day then just 10 days later is Easter Sunday…WHAT?!
Dear time, please just slow down a little okay?
Normally for St. Patrick’s Day I like to go all out slow cooking some corned beef, baking homemade soda bread and tons of potatoes but this year I’m just not feeling all the heavy, salty food.
Anyone with me?
So when I went to the store today to do my weekly grocery shopping at Trader Joe’s I was so excited to see all the fun green food they had for St. Patrick’s day that wasn’t just the typical corned beef and cabbage.
I was instantly inspired to do a post about the green food at Trader Joe’s to share with you all. Some of this food is actually related to St. Patrick’s day and some is just green and delicious.
Here are some of my favorite finds for St. Patrick’s Day from Trader Joe’s:
Cilantro and Jalepeno Hummus- This is my favorite hummus EVER! Doesn’t matter if it’s St. Patty’s or not it’s fantastic! Slice up some green veggies (cucumbers, green peppers, zucchini, celery..) and you have yourself a healthy St. Patrick’s Day appetizer!
Irish Porter Cheddar Cheese and Pesto Gouda Cheese- Like we really need an excuse like St. Patty’s Day to eat delicious cheese? Personally I’ve never had the Irish Porter cheese but I have had the Pesto Gouda and let me tell you…DELICIOUS!
Irish Bangers- Not feeling making a big corned beef dish this year like me? Doing Irish Bangers with some mashed potatoes is a great alternative. Even better, these Irish Bangers from Trader Joe’s are all natural and are REALLY flavorful!
Irish Soda Bread- There is nothing is more delicious than a hot slice of Irish soda bread with a little butter on it…mmmmmm. So if you’ve feeling lazy like me this year you HAVE to try the soda bread from Trader Joe’s! It’s VERY good!
Popcorn- Pickle flavored popcorn. Seriously don’t knock it until you try it!
Kale Chips- Yet another green snack option! These green, crunchy chips are seriously addicting…you’ve been warned. I usually just eat them by themselves but they’re also really good put into salads for a little extra crunch.
Green Juice- What kind of health blogger wouldn’t mention green juice on St. Patrick’s Day? Normally I don’t really like store bought green juices but this one from Trader Joe’s is actually really good and made with high quality ingredients!
- Sunday: At my parent’s house
- Monday: Spaghetti squash with meat sauce
- Tuesday: Crockpot Salsa Chicken Thighs
- Wednesday: Leftovers
- Thursday: Trader Joe’s Irish Bangers with cauliflower mash
- Friday: Pasta with chicken and broccoli
- Saturday: Chicken parmesan (Pre Hot Chocolate Run meal)
