I spent this past weekend in Vegas for some quality fun and family time.
It was quick trip; drive out Friday afternoon and then turn around and come back Sunday morning but it was worth it.
The drive from San Diego to Vegas can anywhere from 4 to 12 hours depending on traffic. This trip took about 8 hours but it went by very quickly since my boyfriend, Bryce, and I discovered the podcast Serial and packed awesome snacks.
Total side note- Have you listened to Serial? It’s basically Making A Murderer but a podcast. I highly recommend it! And for those who have watched it…Did he do it?
When I’m packing for a road trip I’m that psycho that packs about 9835783945 drinks, 75687435 snacks and strategically plans exactly where we’re stopping for lunch.
So I figured what better of a What I Ate Wednesday than sharing What I Ate on my road trip to Vegas and doing a mini Vegas recap as well!
6:00 am: Woke up and had a cup of coffee.
7:00 am: To keep on track for marathon training I had to get in a 15 mile run the day I left for Vegas since I knew I probably wouldn’t be doing much running once I got there.
Whenever I’m doing a run that’s longer than 10-12 miles I eat an entire Bobo’s Oat Bar. These things are delicious and really keep you satisfied through a long run.
11:00 am: For brunch I had a ton of leftover spaghetti that I ate so quickly I didn’t even take a picture…oops. Then Bryce and I got into the car and headed to Vegas.
1:00pm: STARVING! Thank goodness Curate had reached out to me asking if I’d like to try their new snack bars and sent me a sample of each of their amazing flavors. Bryce and I each ate one to help hold us over to lunch.
I had heard about Curate bars before but had never actually tried one. Let me tell you these are SO GOOD!
These are not your basic snack bars. I really can only describe them in 1 word: decadent. They’re chewy but crunchy, sweet but salty and oh so flavorful.
Bryce’s initial reaction to these was “How on earth are these healthy? They’re SO GOOD.”
This is coming from a guy who normally HATES any kind of snack bar. He was very intrigued by the Dark & Tempting flavor with the balsamic vinegar.
Please just look at these flavor combinations: Berry Bliss, Dark Chocolate & Hazelnuts, Dark Chocolate Strawberries & Pistachios, Dark Chocolate & Almonds, Marcona Almond & Apricot, Balsalmic Fig & Hazelnut.
Fun fact: Curate means to bring things together to share them as a collection. And that’s exactly what Curate does! They combine the most unique ingredients into one delicious bar.
I don’t like to eat bars that don’t have high quality natural ingredients in them so I was very pleased to see that Curate bars have no artificial preservatives, flavors or colors.
Instead they are packed with superfoods like quinoa, hemp seeds, flax seeds, chia seeds, almonds…etc.
These bars are high in plant based fiber and protein and really fill you up. Hello perfect road trip snack or really anytime snack.

3:00 pm: We had to make a stop at In N Out Burger in a tiny city called Barstow (basically the half way point to Vegas).
Since I’d ran 15 miles that morning I got my burger with a bun instead of my usual protein style. REBEL!

After we finished eating Bryce and I stopped by Starbucks for a little caffeine boost to make it the rest of the way to Vegas.
I am currently OBSESSED with their Sparkling Passion Tango Tea. If you’re feeling really fancy have them add lemonade to it for the most delicious treat ever.

6:30 pm: We were seriously STILL stuck in traffic and STILL hadn’t even booked a hotel for the night…living on the edge here people.
I think at this point I was just munching/ drinking out of boredom but I loved every bite of this Jalapeno Skinny Pop and every sip of my Grapefruit Perrier.
7:30 pm: We FINALLY got to Vegas and ended up scoring a pretty great hotel deal using Hotel Tonight.
8:00 pm: Bryce and I got up to our room and were SO EXCITED to be out of the car that we immediately popped a bottle of Champagne and started to get ready.
10:00 pm: We totally lost track of time and finally headed out to the Las Vegas strip to walk around and find somewhere to eat dinner. After randomly wandering around for awhile we decided to grab sushi at Nobu.
Ideally, I would have wanted to eat somewhere that didn’t have a location in San Diego but hey I was starving and it was already 10:00 pm.
We ordered 6 rolls and our favorite was the very simple Yellotail & Jalepeno roll (on the left).
I also fell in love with this ginger cocktail the bartender made for me. If I could just eat/drink ginger at every meal I’d be the happiest person ever! Cheers!
Again, I’m so sorry for the quality of 99.9% of these photo’s. When I’m out and about I seem to document everything via Snapchat lately.
The rest of the night: After dinner Bryce and I met up with his brother for a couple of drinks at Toby Keith’s I Love This Bar, did a little gambling and were passed out by 1:00 am.
It was really fun going to Vegas and doing something other than the club scene for once. When my marathon is over in June I defiantly want to make another trip out to Vegas and see The Beatles Love show #BucketList.
The rest of the trip: We spent the next day with Bryce’s family catching up, eating, relaxing and watching a ton of March Madness basketball before making the drive home on Sunday!
