TGIF! TGIF! TGIF!
Happy Friday! Who else is excited that it’s the weekend?
This week was crazy busy and I’m so ready to relax and unwind. Thankfully, I discovered overnight oats which has allowed me to still eat healthy despite being crazy busy.
Honestly, if you haven’t jumped on the overnight oats bandwagon now is the time!
I posted a recipe for very basic overnight oats awhile back (aka the easiest breakfast EVER). I’m addicted! I’ve had overnight oats for breakfast every single day since that post.
Recently I’ve been seeing recipes for overnight oats using protein powder all over Pinterest so figured…why not give it a try?
I topped my Peanut Butter Chocolate Protein Oats with Trader Joe’s Sweet, Savory & Tart Trek Mix and a tablespoon of nut butter (I alternated between peanut butter and almond butter all week) and haven’t looked back.
I even have Bryce hooked on these oats. Which is a miracle considering he normally hates eating breakfast.
But I mean…who doesn’t want to eat peanut butter and chocolate 100% guilt free for breakfast?
Not only are these oats DELICIOUS but they are also packed with protein and fiber to keep you full for hours.
I normally eat my bowl at about 8:00 am and don’t even feel hungry until 11:00 am which is amazing considering I normally get hungry every hour with all this running I’m doing.
Still need some convincing to try overnight oats?
Oats have some pretty incredible health benefits. Bryce told me a story when I was writing this post about how his dad went to the doctor and was told he had high cholesterol and if he didn’t get it down he’d have to go on medication.
All his dad did was eat a handful of rolled oats every morning and his cholesterol went back to normal. It’s amazing what small changes in your diet can do.
Besides lower cholesterol here are some other health benefits of oats:
- balances blood sugar
- helps with weight loss
- prevents cancer
- lowers blood pressure
- stops cravings
- protects against heart disease
- 1/2 cup rolled oats
- 1 cup unsweetened almond milk
- 1 tbsp chia seeds
- 2 tbsp peanut butter chocolate protein powder*
- 1/2 tsp vanilla extract
- 1/2 tsp cocoa powder
- -your favorite nut butter
- -Trader Joe's Sweet and Savory Trek Mix*
- combine all ingredients in jar or tupperware
- cover and refrigerate overnight
- stir, add toppings and enjoy
