I just got home from a work trip to Portland and am already craving an almond milk latte from Barista and drunken wings from Bang Bang mmmmmmmm.
Before this trip to Portland I had only been to the city once and was really only there for 24 hours so this was my first full on Portland foodie experience and you guys…it didn’t disappoint.
But since I’m honestly falling asleep trying to watch this NBA playoff game and catch up on emails I just wanted to give you all a quick little recap of all the awesome places I ate this weekend.

BUSY. CRAZY. HECTIC.
Yep, pretty much the words to describe my life right now.
I know everyone is busy but you guys I just feel like right now there are simply not enough hours in the day.
Last week I officially accepted a new position at work as the San Diego Senior Brand Ambassador for Perfect Bar WOO HOO! Transitioning out of my current role into this one has been crazy to say the least. Oh and it doesn’t stop there…I’m flying out to Portland for work on Friday then flying to Boise for a wedding then BAM its Memorial Day Weekend with CrossFit regionals and then Rock ‘N’ Roll San Diego ahhhhh! It never ends.
Honestly just writing this post is giving me anxiety thinking about all the things I have coming up but am just trying to take it day by day and do the best I can to maintain a healthy balance in my life.
Usually with a busy schedule eating healthy is one of the first things to go (I’m 100% guilty of this). BUT with my running being so limited eating like crap simply isn’t an option. I’ve really been relying on quick, easy, convenient meals these past couple weeks and wanted to share these awesome Chicken Lettuce Wraps with you all today.
Last week I shared the unfortunate news that my right calf has been causing me a lot of pain and discomfort. Well, I attempted to ease back into training this past week and things have just gotten worse.
I’m not a doctor but I think the extra stress on my lower legs with my calf being irritated has caused my shin splints to really flare up. I’ve battled with shin splints since High School but I can honestly say I have never experienced shin pain like I did this past week.
My week of training actually started out well. I had one good run with minimal pain but then tried running Thursday and felt pain with every step and Friday didn’t even make it 1.5 miles before the pain got so excruciating I had to stop and
walk limp back to my car.
On Friday hobbling back to my car I came to the conclusion that I needed to take some time off running. I’ve been training every single week for almost 2 years and my body is just screaming at me that I need a break. I’m honestly at the point where I can hardly walk without being in pain and know if I don’t stop and take care of myself something really bad like a stress fracture is going to occur.

I remember back in the good old college days when celebrating Cinco De Mayo was a HUGE deal. We’d all skip class, dress up in our finest sombreros and drink disgusting amounts of cheap Mexican beer and tequila.
Well this year to celebrate I’m taking the day off work and will be running 9 miles, doing laundry and visiting my parents…boyyy how things change haha!
So since it’s Friday and a holiday I figured why not do a fun little Friday Favorites post talking all about things I’m loving from Trader Joe’s. I swear they come out with some awesome new product every day…my stomach is certainly happy but my wallet…not so much!
I love learning about new diets, health trends, superfoods…etc.
Just last week I posted about the Keto Diet and earlier this year I actually completed the 21-Day Sugar Detox and shared my entire experience here on my blog.
The other day I was listening to a podcast while planning blog posts for this coming month and the topic of eating a gluten free diet came up. I’ve never really cared if food was gluten free or not but this podcast really got me thinking.
I immediately came home that day and downloaded the book Wheat Belly to read more about gluten and why it’s so bad for us.
YOU GUYS…mind blown!
Within the first few pages of this book I was convinced that gluten was causing a lot of the digestive issues I’ve been experiencing lately.

Last week I ran the La Jolla Half Marathon and completely destroyed my right leg. My original goal was to just go out there and have a good run since it was my first half marathon in about 9 months. Well…my competitive nature got the best of me and I stupidly gave the race 110% when my body was nowhere near ready for that kind of intensity.
This entire past week I’ve been dealing with awful calf pain…we’re taking pain so intense it hurts to walk! So instead of training and working toward my real goal of a 1:45:00 at Rock ‘N’ Roll San Diego on June 4th I’ve been stretching, foam rolling, icing and even went and got new running shoes with custom insoles.
I keep hearing more and more people talking about being on a Ketogenic Diet or “Keto Diet” and wanted to discuss it here.
Honestly, the only reason I have any idea what the Keto Diet is all about is because I use to work at a weight loss company called Medifast where we put clients on a very low carb diet to get their bodies into ketosis (fat burning state). Once my clients were in ketosis their bodies could burn fat more efficiently helping them to lose weight quickly.
I was 100% supportive of this because #1 they were doing it with scientifically designed foods that offered all necessary nutrients, #2 had someone monitoring their diets/body composition and #3 these were people with pretty significant amounts of weight to lose.
So I was kind of shocked to hear that fellow runners, CrossFit athletes and just regular people were doing a Keto Diet and immediately started doing some research to share with you all.
We’re just going to jump right into this post because it’s going to be a long one.
I swear you can’t even make up the crazy things that seem to happen the day before/ day of a race. On Saturday I had to go pick up my mom from the airport at 8:00 pm. I figured this would be perfect…I’d grab her, drive up to my parents house then just stay the night and could leave from their house for the La Jolla Half in the morning.
So I show up to the airport and park in the cell phone lot where you can chill until people’s flights arrive. I turned my car off and sat for about 25 minutes waiting for her to text me that she had landed. When I went to start my car to drive over and grab her…DEAD! My car had completely died. We’re talking would only make a terrible clicking sound when I tried to start it status.
When I go grocery shopping I typically try to avoid the frozen section…mostly because I have 0 self control and if ice cream or frozen pizza is on sale there’s a pretty good chance it’s ending up in my cart.
BUT there are some a frozen products that I love and that are actually pretty darn healthy.
So for this edition of “Friday Favorites” I wanted to share some of my favorite freezer finds and would love to know from you all what frozen products you’ve been loving.
Balancing working full time and training for a half marathon can be challenging.
Do you run before work? After work? What if you get stuck on a project and have to skip a run?
I am not a morning person AT ALL so unfortunately most of my running has to be done after work. With that comes the added morning stress of packing to be sure to have I have clothes, fuel, sunscreen, body glide, a hat…etc.
Over the past few months I can’t tell you all how many times I forgot my Clif Shot Bloks or Body Glide and debated skipping my run. I never actually skip my runs BUT they’re certainly just a little less enjoyable when I’m missing one of my running essentials.
