PISTACHIO GOAT CHEESE LOG

One of my favorite Christmas traditions is my family’s annual Christmas Eve party. Everyone in the neighborhood I grew up in has a light early dinner then goes to one of the houses for appetizers and drinks. We started doing this about 5 years ago and ever since I look forward to sipping french martinis and stuffing my face with cheese almost more than Christmas morning.

It can be stressful to think of an appetizer to bring to the 1,000 Christmas parties you probably have coming up. However, nobody is even disappointed when someone shows up with cheese and crackers. I could seriously skip over the cookies, fudge, dinner rolls…everything and simply eat fancy cheese at a holiday party.

So on the topic of cheese, I’m so excited to share my recipe for this gorgeous Pistachio Goat Cheese Log with you all. This recipe is SO EASY and festive for your next holiday party.

This pistachio goat cheese log is baked for 5-10 minutes to transform the cheese into a creamy, decadent appetizer that’s sure to please a crowd.

I personally love serving this with crackers but it would also be delicious with bread or even veggies if you’re feeling really healthy.

  1. Preheat oven to 350 and bring goat cheese log to room temperature (basically just leave it out for like 20 minutes)
  2. While your cheese is warming up roughly chop your pistachios and cranberries and lay them out in an even layer on a plate
  3. Roll your room temperature goat cheese log in your chopped pistachios and cranberries covering all sides of the cheese. You may need to press the pistachios and cranberries into the cheese to get them to stay.
  4. Line a baking sheet with parchment paper and gently place your gorgeous goat cheese log onto it- BE CAREFUL!
  5. Bake goat cheese log for 5-10 minutes. You want the cheese to get soft, not melted. Goat cheese is usually a crumbly cheese but when it is warmed up a little it becomes so creamy and decadent.
  6. Remove cheese from oven and place onto serving dish. Drizzle the goat cheese log with honey (however much you'd like) and serve with crackers, bread, spread it on a sandwich...and enjoy.
Recipe Notes

Feel free to change up the quantities of pistachios and cranberries. I personally like saltier food so I do more pistachios but Bryce made a comment that he would have wanted more cranberries and honey...to each their own. Make it unique and make it your own πŸ™‚

    First, you get a high five for using goat cheese instead of cream cheese. I’m not a fan of cream cheese, but I like the idea of using goat cheese instead because YUM! Second, you get another high five for using pistachios because those are my favorite. Basically this recipe was made for me. πŸ™‚

      There’s so many similar recipes that combine goat cheese with cream cheese to make it less crumbly but EW I’m with you I can’t do cream cheese. Simply baking the goat cheese for like 5 minutes will make it soft and spreadable πŸ™‚ Enjoy and let me know how you like it!

    Goat cheese is my FAVORITE. Seriously, I get way too excited over goat cheese so I am pumped for this recipe. I’m gonna send it to my mom to see if she’ll make this with me!

    I just ate a log of Goat Cheese (ok maybe a ball but either way it was an unnecessary amount of cheese for one person to consume haha). This recipe looks right up my alley! I love the Trader Joe’s Cranberry Goat Cheese and the concept of adding pistachios is so unique and festive!

      Haha story of my life. I’m obsessed with that Trader Joe’s Cranberry goat cheese too- this is almost exactly the same just with a salty element from the pistachios to balance out the sweetness. SO GOOD!
