Cooking during the summer is THE WORST!
It’s legitimately 85 degrees here in San Diego with 90% humidity and a chance of thunderstorms. SAY WHAT?!? Considering I can hardly sit on my couch to write this post without sweating there is no way I’m turning on an oven or standing over a hot skillet to cook dinner.
Enter my favorite cooking invention ever…the crock-pot.
You guys, I don’t think I could survive without a crock-pot. It takes all the fuss out of cooking meat, doesn’t make your house 983457984 degrees and anything you cook in a crock-pot is delicious.
When I got home from work last night the thermostat in my apartment said it’s 90 degrees.
WHAT!?!?! Calm down San Diego I didn’t realize I was living in a hot yoga studio.
The last thing I want to do when it’s already that hot is turn on my oven or stand over a hot stove cooking dinner. In fact, I’d honestly probably rather starve.
So to solve this issue I’ve turned to my trusty crockpot!
Yep, crockpots are not just for hot winter soups. They’re also an absolute life saver in the hot summer months when you don’t want your house turning into a sauna.
To fight the heat Bryce and I have been living off my Salsa Chicken recipe. We’ve used it for burritos, tacos, protein style tacos, salads, scrambled with eggs, plain, burrito bowls…really anything you can add chicken to. So when I was thinking of my third and final recipe to share for my One Meal Two Ways series it was obvious it had to be my Salsa Chicken for a little One Meal 20 Ways action haha.
I still can’t get over how delicious A Cup of Kellen’s Butternut Squash & Lentil Salad was last week (pictured above). It was delicious, festive, filling and so healthy- Truly a must try!
Christmas is sneaking up so fast it’s scary and I just realized I haven’t posted a single holiday recipe…oops. I’m really not a huge sweet fan (give me some cheese and crackers all day please) so instead of focusing on holiday cookies and stuff I’m going to do holiday appetizers and breakfast ideas.
