As the weather heats up for summer I find myself less and less motivated to cook.
Just the other night I was sitting in my car before yoga sweating to death trying to think of something for dinner and nothing sounded good but a smoothie. Obviously I can’t live off smoothies (I wish) so Bryce and I ended up just going to Trader Joe’s and grabbing a couple salads…easy, healthy, done!
BUT going to the grocery store every day is a pain so I really got thinking about some super quick and healthy meal options.
I already have a post with 3 healthy meals ready in 10 minutes or less and this one with 30 healthy meals made in 30 minutes or less but I needed something new in my life.
Well, when I was at Trader Joe’s picking up dinner I saw it…yep saw one of my favorite products of all time…their fresh bruschetta sauce.

Friday and Saturday were spent relaxing then on Sunday my family and I went to the Del Mar races and Ballast Point 20th Anniversary beer festival to celebrate my dad’s birthday.
There were over 80 different beers at the festival…most of which have never left the tasting room. Some of my favorites were the Cucumber Longfin, Mango Dorado and the best Peach Sour mmmm!
Now I’m currently enjoying every second of this Monday off by writing this post poolside relaxing and recovering.
Life is gooood!
When I got home from work last night the thermostat in my apartment said it’s 90 degrees.
WHAT!?!?! Calm down San Diego I didn’t realize I was living in a hot yoga studio.
The last thing I want to do when it’s already that hot is turn on my oven or stand over a hot stove cooking dinner. In fact, I’d honestly probably rather starve.
So to solve this issue I’ve turned to my trusty crockpot!
Yep, crockpots are not just for hot winter soups. They’re also an absolute life saver in the hot summer months when you don’t want your house turning into a sauna.
To fight the heat Bryce and I have been living off my Salsa Chicken recipe. We’ve used it for burritos, tacos, protein style tacos, salads, scrambled with eggs, plain, burrito bowls…really anything you can add chicken to. So when I was thinking of my third and final recipe to share for my One Meal Two Ways series it was obvious it had to be my Salsa Chicken for a little One Meal 20 Ways action haha.
Once upon a time I worked as a weight loss counselor at Medifast Weight Control Centers. My job was to help clients stick to an extremely strict diet until they got down to their goal weight.
People never really complained that they didn’t get carbs, or that the meal replacements tasted bad or about anything really expect having to cook something specifically for them and something completely different for their families.
I didn’t really understand their struggle at the time since I was single and living with roommates. I made what I wanted to eat and that was that.
Fast forward to now. I live with my boyfriend and let’s just say he’s not one to be okay with eating zucchini noodles and tofu every night for dinner…I wish.

Well…your wish is my command!
So to get as many different ideas as possible I reached out to some of my fellow bloggers and came up with a HUGE roundup of 30 Healthy Meals Made In 30 Minutes Or Less! This roundup includes everything from chicken enchiladas to vegan mac and cheese so enjoy!
And now that you have no excuse not to eat healthy for like an entire month…GET COOKING!
Lunch is one of the most challenging meals of the entire day.
People tend to either skip it all together, settle for grabbing some fast food or make their own lunch.
Now let’s be honest here…most people don’t make their own lunches on a daily basis.
Because it’s hard to come up with ideas! Plus, who wants to cook in the middle of the day or has their crap together enough the night before to cook something?
I sure don’t!
Meal prepping on Sunday’s is crucial for me to eat healthy throughout the week and has been especially important lately since I have marathon training, a full time job, my blog and still need a little personal time in there.
So when I discovered Trader Joe’s Balela Salad a couple weeks ago I was instantly obsessed with how easy it was to bring a bag of mixed greens and a container of Balela Salad to work to toss together for the world’s easiest lunch ever.
Eating healthy during the week can be extremely challenging. I personally am out the door for work at 7:30am, off at 6pm, make it to the gym or yoga by 7pm and get back home at 8:30pm. At 8:30 at night there is no way I’m cooking up some healthy Pintrest meal. I need something fast and filling ASAP!
All the ingredients for this salad can be found at Trader Joe’s and cost about $10. This recipe serves 4 people so I usually whip this salad up in 5 minutes grab 2 bowls and 2 Tupperware, divide it up and BOOM dinner AND lunch for the next day is served. Sometimes I’ll add rotisserie chicken or some other protein I have on hand but either way it’s very filling.
Please note the hot and sweet cherry peppers are a little bit on the spicy side so if you do not like heat use less.
