5 Ingredient Spicy Red Lentil Pasta

Is there anything better than a big bowl of hot pasta smothered in sauce and topped with cheese?


Pasta is one of my favorite things to eat and use to be something I’d limit myself to enjoying only once or twice per week since well…traditional pasta is basically just empty calories.

For the past few years I attempted to get my “pasta” fix by spiralizing zucchini into ‘zoodles’ or from spaghetti squash but let’s be really honest here…YES those are delicious pasta alternatives that are packed with nutrients but they simply don’t replace eating pasta. Secretly with every bite of  ‘squash pasta’ I desperately was hoping someone out there would create a healthy pasta.

Well my dreams have officially become a reality.

Time for another another week of meals already. Is it just me or is time seriously flying? How on earth is Thanksgiving in less than 2 weeks? I’M NOT READY! It was just the 4th of July like yesterday.

Anyway, with the holidays approaching now is the most important time of year to be mindful of our eating. We have to remember Thanksgiving is only 1 day! It’s a Holi-DAY people not an excuse to have a Holi-MONTH!

So join me in this 10 day countdown to the holiday to vow to eat healthy,! Maybe just have 1 glass of wine not 3, skip dessert every other night, drink an extra glass of water…tiny little things really do help!

I’m going to be dedicating this ENTIRE WEEK to sharing my favorite Thanksgiving side recipes with you all…we all know the sides are what makes Thanksgiving great!

Thanksgiving side recipes coming this week (in no particular order):

  • Cauliflower “mashed potatoes”
  • Cheesy corn pudding with chiles
  • Double potato and leek casserole
  • Kale and butternut squash gratin
  • Green beans with maple pecans

If you’re looking to cut down on carbs or just to add some more veggies into your diet you have to try this easy spaghetti squash recipe  in place of pasta.

Let’s first compare 1 cup of spaghetti squash with 1 cup of traditional spaghetti noodles. There’s really no explanation needed 42 cals v. 221 cals and 10g of carbs v. 43.2g of carbs? So seriously, try spaghetti squash in place of spaghetti and enjoy your favorite “pasta” dishes guilt free.




Serves: 4-6


  • 1 large spaghetti squash (about 2lbs)
  • Spray olive oil (I use Trader Joe’s)
  • Salt
  • Pepper

…yes THAT easy!
