I truly can’t believe that the 4th of July is in less than 2 weeks.
Where the heck has this year gone?
Normally, I don’t do much for the 4th since it’s kind of amateur hour here in San Diego with a bunch of drunk tourists getting arrested at the beach. But, this year I have plans. My family has a house on Lake Michigan and it’s been years since we’ve all made the effort to get out there. Last week we pulled the trigger and officially booked tickets!
Buying these tickets got me thinking of all the 4th of July foods and just how terrible most of the meats, appetizers and sides are for you. So, I started brainstorming some healthier options to share on my blog.
I made a healthy, festive, delicious side dish recipe I’m sharing on the blog next week but today I wanted to talk about my favorite 4th of July food…HOT DOGS!
BUSY. CRAZY. HECTIC.
Yep, pretty much the words to describe my life right now.
I know everyone is busy but you guys I just feel like right now there are simply not enough hours in the day.
Last week I officially accepted a new position at work as the San Diego Senior Brand Ambassador for Perfect Bar WOO HOO! Transitioning out of my current role into this one has been crazy to say the least. Oh and it doesn’t stop there…I’m flying out to Portland for work on Friday then flying to Boise for a wedding then BAM its Memorial Day Weekend with CrossFit regionals and then Rock ‘N’ Roll San Diego ahhhhh! It never ends.
Honestly just writing this post is giving me anxiety thinking about all the things I have coming up but am just trying to take it day by day and do the best I can to maintain a healthy balance in my life.
Usually with a busy schedule eating healthy is one of the first things to go (I’m 100% guilty of this). BUT with my running being so limited eating like crap simply isn’t an option. I’ve really been relying on quick, easy, convenient meals these past couple weeks and wanted to share these awesome Chicken Lettuce Wraps with you all today.

I remember back in the good old college days when celebrating Cinco De Mayo was a HUGE deal. We’d all skip class, dress up in our finest sombreros and drink disgusting amounts of cheap Mexican beer and tequila.
Well this year to celebrate I’m taking the day off work and will be running 9 miles, doing laundry and visiting my parents…boyyy how things change haha!
So since it’s Friday and a holiday I figured why not do a fun little Friday Favorites post talking all about things I’m loving from Trader Joe’s. I swear they come out with some awesome new product every day…my stomach is certainly happy but my wallet…not so much!
One of my ultimate pet peeves is when people say “I’m too busy to eat healthy/ cook my own food”.
Uhhhhhh…newsflash everyone is busy!
There are seriously some days where I wake up at 5:00 am to blog, leave for work at 8:00 am, get off work at 5:30 pm, sit in traffic and drive to yoga at 7:00 pm then get home at around 8:30 pm and STILL cook myself a healthy meal because I value my health.
The goal of this post is not to make you all feel guilty or like you’re lazy because lets be honest… it’s freakin’ hard to think of quick, healthy meals that taste good! My goal is to give you a little inspiration and a few ideas of easy, healthy meals that you can make in 10 minutes or less. Oh and to make your lives even easier all the ingredients for these recipes can be found at Trader Joe’s.
Is there anything better than a big bowl of hot pasta smothered in sauce and topped with cheese?
Pasta is one of my favorite things to eat and use to be something I’d limit myself to enjoying only once or twice per week since well…traditional pasta is basically just empty calories.
For the past few years I attempted to get my “pasta” fix by spiralizing zucchini into ‘zoodles’ or from spaghetti squash but let’s be really honest here…YES those are delicious pasta alternatives that are packed with nutrients but they simply don’t replace eating pasta. Secretly with every bite of ‘squash pasta’ I desperately was hoping someone out there would create a healthy pasta.
Well my dreams have officially become a reality.
I look forward to the Superbowl almost as much as Christmas.
Every year I know my
San Diego Los Angeles Chargers (RIP) won’t be in the Superbowl but I still just love the whole idea of getting together with friends/ family to eat, drink and watch an epic game. This year should not disappoint with Tom Brady (love me some Brady) and the Patriots playing the Falcons…GO PATS!
Last year I did a post on Super Easy Superbowl Snacks and it got such good feedback I knew I had to do something similar for 2017. Well you guys I decided to really go big this year. Not only am I sharing a recipe for Wasabi Deviled Eggs but I’m also including 20 other healthy snackr ideas AND a giveaway for one of my favorite cookbooks the I Love Trader Joe’s Party Cookbook.
There are 2 kinds of people during the holidays: the ones who have everything planned weeks in advance and those who will be scrambling around Wednesday night at 9:00 pm to find a turkey.
I tend to be the latter.
In fact I just figured out TODAY what I need to bring for Thanksgiving dinner– thankfully it’s just booze and an appetizer haha!
But with work, traveling, grocery shopping…etc this week just figuring out an appetizer to bring is overwhelming right now. Then I remembered this incredible hummus recipe I saw on What’s Gaby Cooking a couple weeks ago. Gaby actually makes her own hummus and PEELS the chickpeas…seriously? Ain’t nobody got time for that!
In true lazy girl, last minute fashion I decided to try this recipe out this past weekend using my favorite Trader Joe’s hummus and you know what…IT’S FABULOUS, takes less than 5 minutes to make, healthy and oh so very festive. Doesn’t get much better than that!
September has been a crazy month for me. It started with celebrating my dad’s birthday at the Ballast Point beer festival, then my friends at I went to the KAA BOO music festival in Del Mar, then I went out to the Colorado River with my family and tomorrow I have one last event…CRSSD music festival downtown San Diego.
I’m exhausted just typing all that.
With all that going on I have not had much time for blogging and you know what it’s felt great to kind of disconnect, relax and really enjoy myself. BUT after this weekend it’s back to creating content and bringing you all value in every single post.

I apologize for my lack of blogging the past couple weeks. Life got kind of crazy celebrating my birthday then running my half marathon last weekend.
So since I haven’t had the time to create any new recipes or anything I figured what better time than now to do a little Friday Favorites post.

Lunch is one of the most challenging meals of the entire day.
People tend to either skip it all together, settle for grabbing some fast food or make their own lunch.
Now let’s be honest here…most people don’t make their own lunches on a daily basis.
Because it’s hard to come up with ideas! Plus, who wants to cook in the middle of the day or has their crap together enough the night before to cook something?
I sure don’t!
Meal prepping on Sunday’s is crucial for me to eat healthy throughout the week and has been especially important lately since I have marathon training, a full time job, my blog and still need a little personal time in there.
So when I discovered Trader Joe’s Balela Salad a couple weeks ago I was instantly obsessed with how easy it was to bring a bag of mixed greens and a container of Balela Salad to work to toss together for the world’s easiest lunch ever.
