Is there anything better than a big bowl of hot pasta smothered in sauce and topped with cheese?
Pasta is one of my favorite things to eat and use to be something I’d limit myself to enjoying only once or twice per week since well…traditional pasta is basically just empty calories.
For the past few years I attempted to get my “pasta” fix by spiralizing zucchini into ‘zoodles’ or from spaghetti squash but let’s be really honest here…YES those are delicious pasta alternatives that are packed with nutrients but they simply don’t replace eating pasta. Secretly with every bite of ‘squash pasta’ I desperately was hoping someone out there would create a healthy pasta.
Well my dreams have officially become a reality.
I look forward to the Superbowl almost as much as Christmas.
Every year I know my
San Diego Los Angeles Chargers (RIP) won’t be in the Superbowl but I still just love the whole idea of getting together with friends/ family to eat, drink and watch an epic game. This year should not disappoint with Tom Brady (love me some Brady) and the Patriots playing the Falcons…GO PATS!
Last year I did a post on Super Easy Superbowl Snacks and it got such good feedback I knew I had to do something similar for 2017. Well you guys I decided to really go big this year. Not only am I sharing a recipe for Wasabi Deviled Eggs but I’m also including 20 other healthy snackr ideas AND a giveaway for one of my favorite cookbooks the I Love Trader Joe’s Party Cookbook.
There are 2 kinds of people during the holidays: the ones who have everything planned weeks in advance and those who will be scrambling around Wednesday night at 9:00 pm to find a turkey.
I tend to be the latter.
In fact I just figured out TODAY what I need to bring for Thanksgiving dinner– thankfully it’s just booze and an appetizer haha!
But with work, traveling, grocery shopping…etc this week just figuring out an appetizer to bring is overwhelming right now. Then I remembered this incredible hummus recipe I saw on What’s Gaby Cooking a couple weeks ago. Gaby actually makes her own hummus and PEELS the chickpeas…seriously? Ain’t nobody got time for that!
In true lazy girl, last minute fashion I decided to try this recipe out this past weekend using my favorite Trader Joe’s hummus and you know what…IT’S FABULOUS, takes less than 5 minutes to make, healthy and oh so very festive. Doesn’t get much better than that!
September has been a crazy month for me. It started with celebrating my dad’s birthday at the Ballast Point beer festival, then my friends at I went to the KAA BOO music festival in Del Mar, then I went out to the Colorado River with my family and tomorrow I have one last event…CRSSD music festival downtown San Diego.
I’m exhausted just typing all that.
With all that going on I have not had much time for blogging and you know what it’s felt great to kind of disconnect, relax and really enjoy myself. BUT after this weekend it’s back to creating content and bringing you all value in every single post.

I apologize for my lack of blogging the past couple weeks. Life got kind of crazy celebrating my birthday then running my half marathon last weekend.
So since I haven’t had the time to create any new recipes or anything I figured what better time than now to do a little Friday Favorites post.

Lunch is one of the most challenging meals of the entire day.
People tend to either skip it all together, settle for grabbing some fast food or make their own lunch.
Now let’s be honest here…most people don’t make their own lunches on a daily basis.
Because it’s hard to come up with ideas! Plus, who wants to cook in the middle of the day or has their crap together enough the night before to cook something?
I sure don’t!
Meal prepping on Sunday’s is crucial for me to eat healthy throughout the week and has been especially important lately since I have marathon training, a full time job, my blog and still need a little personal time in there.
So when I discovered Trader Joe’s Balela Salad a couple weeks ago I was instantly obsessed with how easy it was to bring a bag of mixed greens and a container of Balela Salad to work to toss together for the world’s easiest lunch ever.

Naan, goat cheese, green olive tapenade & artichokes…does it really get any better than that?
Actually, it does because you can get everything from Trader Joe’s and whip this delicious meal or appetizer up in 10 minutes.
You may be asking what Naan is. Naan is an oven baked flat bread that normally is eaten soft but is even more delicious crisped up for a pizza variation.

This week was crazy busy and I’m so ready to relax and unwind. Thankfully, I discovered overnight oats which has allowed me to still eat healthy despite being crazy busy.
Honestly, if you haven’t jumped on the overnight oats bandwagon now is the time!
I posted a recipe for very basic overnight oats awhile back (aka the easiest breakfast EVER). I’m addicted! I’ve had overnight oats for breakfast every single day since that post.
Recently I’ve been seeing recipes for overnight oats using protein powder all over Pinterest so figured…why not give it a try?
Time is just FLYING! I can’t believe that next week is St. Patrick’s Day then just 10 days later is Easter Sunday…WHAT?!
Dear time, please just slow down a little okay?
Normally for St. Patrick’s Day I like to go all out slow cooking some corned beef, baking homemade soda bread and tons of potatoes but this year I’m just not feeling all the heavy, salty food.
Anyone with me?
So when I went to the store today to do my weekly grocery shopping at Trader Joe’s I was so excited to see all the fun green food they had for St. Patrick’s day that wasn’t just the typical corned beef and cabbage.
I was instantly inspired to do a post about the green food at Trader Joe’s to share with you all. Some of this food is actually related to St. Patrick’s day and some is just green and delicious.
I love leftovers. They just make life so much easier.
One of the best tips I can give to anyone struggling to think of healthy lunch ideas is to simply cook a double portion at dinner.
Bryce probably thinks I’m crazy but right when I’m done cooking dinner I break out 2 Tupperware and immediately portion out lunches for us both before we dig in.
This helps in so many ways:
- We both have a healthy lunch ready for the next day
- It helps control portions at dinner
- You save so much money
- You save SO MUCH TIME!!!!!
- The lunches are way more exciting than some boring turkey sandwich over and over again

On Sunday I had a BBQ at my house for my sister’s birthday and purposely cooked tons of extra salmon, steak and sausage to have for the week…killing 2 birds with 1 stone right? Host a BBQ and meal prep for the week!
